When it comes to pairing, the best picks are high-acid, un-oaked whites that won’t upstage the flamboyant oyster.

Some of the tastiest varietals include albarino, gruner veltliner, champagne and sauvignon blanc, while aromatic gewurztraminer and riesling can be overpowering.
