Within 24 hours of being harvested, you can have fresh oysters delivered to your doorstep. What’s next? Fast food oysters at McDonalds?

Not just yet. But in the meantime I’m happy to know about “The Oyster Girls” who have a traveling oyster bar, importing the best of Tomales Bay north to oyster lovers like myself.

Apparently the gals can dress the oysters up or down, sweeping in with oysters on the half shell or serving them on beds of ice, for fancy affairs or backyard patio barbecues. The going rate for this succulent goodness? $2 per oyster. (Plus set up fee of course.)

When it comes to pairing, the best picks are high-acid, un-oaked whites that won’t upstage the flamboyant oyster.

Some of the tastiest varietals include albarino, gruner veltliner, champagne and sauvignon blanc, while aromatic gewurztraminer and riesling can be overpowering.
