There are just a few pairing tips to keep in mind:
1) Opt for white wines rather than big boy reds because they would overwhelm your veggie dish.
2) Of course, if you roast, grill or slow cook your dish, light reds like pinot noir and Beaujolais will marry well.
3) Artichokes may be the trickiest of all to pair, but don’t despair. Whites with great acidity make for a good coupling.
